Poor Toms Dry Gin 41.3% 700mLPoor Toms Dry Gin was born when two friends, Griffin and Jesse, started making gin in their kitchen. They then spent their savings on a 200L German copper still and started their operation in a small warehouse in Sydney's Inner West. The final part of the plan was inviting Marcel Thompson, one of Australia's most experienced gin distillers, to join their team. Poor Toms Gin is handcrafted in small batches from Australian wheat spirit and features fresh green apple, native strawberry gum, and chamomile.
Marcel Thompson has worked for United Distillers NZ, Tanqueray, and Gordon’s gins, and with his help, Poor Toms locked down a cracking recipe.
“We’re very lucky that he came along because...it would’ve been a nightmare,” Griffin explains. “We were running on blind confidence so we’re thankful that we got that stroke of luck.” The final product is a dry, wheat-based gin flavoured with strawberry gum (leaves), lemon myrtle and Granny Smith apple. To quote the Jesse, Poor Toms have gone for "a fairly subtle, fruity, fresh, floral flavour that makes it easy to drink a double - triple even”. “Dangerously easy, some would say,” adds Griffin.
